Samples of each batch of mono distilled cachaças, available to be purchased from selected producers, are evaluated by means of physical-chemical analyses and gas chromatography. For a batch to be chosen it is not enough to have an excellent analytical profile. Each available batch is also evaluated by means of sensory analysis. The master distiller determines which products should be purchased and allowed to proceed to the next stage consisting of the bi distillation. As a result of the refined selection process, only cachaças satisfying very high standards are bi distilled in Fazenda Soledade.
